Easy Burrito Bowl
Ingredients
1 cup uncooked quinoa
3 cups chopped romaine
1 (15.25-ounce) can whole kernel corn, drained
1 (15-ounce) black beans, drained and rinsed
2 Roma tomatoes, diced
1 avocado, halved, seeded, peeled and diced
2 tablespoons chopped fresh cilantro leaves
cilantro and chipotle salsa yogurt drssing from Walmart
(chicken can be added in order to bring more protein into the mix)
Directions
Cook the quinoa according to package directions
Have all other ingredients separate and create burrito bowls accordingly
