Ingredients
1 Tbsp olive oil
1 Tbsp balsamic
1/4 cup chopped red onion
5 cloves of garlic
5 roma tomatoes (more if there doesn't look like there is enough)
7 basil leaves (add more if there isn't sufficient color)
1 container of mozzarell pearls (drained)
3 chicken breast (diced finely)
1 package of pasta
Directions
Combine onion, olive oil, balsamic, salt and pepper. Set aside a few minutes.
Dice and cooked chicken in skillet
While chicken is cooking, chop tomatoes and place in a large bowl. Combine with garlic, basil, onion-balsamic combo and additional salt and pepper to taste. Set aside and let it sit at least 10 minutes or as long as overnight.
Once chicken is cooked, let the chicken sit and cool for 3 mins. Then combine all ingredients in a large bowl and serve :)
