Aunt Jenny's Southwestern Salsa w/ Black Beans and Corn
Ingredients
2 tsp cumin
1 15 oz can black beans, rinsed and drained
2 15.25 oz cans of whole kernel corn, drained
2 red bell peppers, seeded and minced
1 red onion, minced
1 cup minced parsley
2/3 cup lime juice
1/2 cup olive oil
6 cloves of garlic, minced or pressed
2 tsp crushed red pepper
1 tsp ground black pepper
Directions
Combine all ingredients, toss well.
Store in refrigerator up to two weeks
